Protosol Beer Clarification

Principle

The negatively-charged silica particles in Protosol associate to form hydrogel in the beer and this then interacts with the insoluble beer haze-forming particles. The resultant flocs precipitate to form sediment.

Alphaclar S

It is a colloidal haze stabilizer which can increase the shelf life of beer.

Increases beer shelf-life due to preventing colloidal haze formation.

Only the specific haze-active polyphenols are removed.

PVPP is insoluble so its removed by filtration and therefore is a processing aid, which is no required to be listed on labels.

Vicfine

Vicfine has a moderate effect on sensitive protein reduction. Whilst not a beer stabilizer in its own right it contributes to the action of silica gel, and compliments PVPP. During settlement of flocculated solids, foam negative factors can be entrained. Brewers regularly notice that Vicfine treated beers have improved foam stability.

Alphafloc Paste

Alphafloc isinglass paste is produced from the clean maws of certain types of fish. These fish maws contain about 98% collagen on a dry ash-free basis. The paste form of isinglass comprises finely divided isinglass in an aqueous base with sodium metabisulphite as preservative. The fish maws are subjected to vigorous cleaning followed by wet size reduction via processing which avoids heat generation (thereby avoiding thermal degradation of the collagen).
